Stovetop, Pot (small), Immersion blender
Peel & dice the onion.
Heat a dab of butter in a pot over medium heat. Add the onion. Cook, stirring for 3 min.
Add the vegetable broth to the pot.
Add the tomatoes, basil & garlic powder.
Season with salt & pepper. Cover & simmer for 10 min.
Add cream (optional). Purée the soup using an immersion blender, blender or food processor. It should be completely smooth & creamy.
Serve the soup garnished with cream (optional) & fresh black pepper. Enjoy!
