Cauliflower (fresh)

Step 1

Preheat the oven to 400°F. Wash & halve the cauliflower. Cut one half into florets. Cut the other half into thick steak slices.

Step 2

Add the steaks & florets to a large pot of salted boiling water. Cook for 8 min.

Harissa (paste)
Maple syrup
Garlic

Step 3

In a small bowl, whisk together the lemon juice, paprika, harissa, syrup, minced garlic, salt, pepper & a drizzle of oil.

Remove the cauliflower steaks from the pot. Let the florets cook for 7 more min.

Lay the steaks on a parchment-lined baking sheet. Cover with the marinade. Roast for 15 min.

Drain the cauliflower florets. Mash them in a bowl with salt, pepper & a drizzle of olive oil. Use an immersion blender, blender or food processor if you have one.

Spread the cauliflower purée over a serving plate. Top with the cauliflower steaks. Garnish with fresh parsley (optional). Enjoy!
