Wash & cut the tomatoes into wedges.
Wash & slice the zucchini into half-moons.
Wash the pepper & remove the seeds. Dice the pepper.
Heat a drizzle of oil in a pan over medium-high heat. Add the veggies, salt & pepper. Cook, stirring for 2-3 min.
Cut the chicken into pieces. Add the chicken, mustard, salt, pepper & another drizzle of oil to the pan. Cook, stirring for 3-5 min.
Once the chicken is cooked through, remove from the heat. Serve garnished with fresh basil leaves & cracked black pepper (optional). Enjoy!
