Make sure you have...
Stovetop, Pot (large), Knife
Step 1
Rinse & dice the peppers.
Step 2
Rinse & dice the eggplant.
Step 3
Rinse & dice the zucchini.
Step 4
Rinse & dice the tomato.
Step 5
Peel the onion & mince. Peel the garlic & mince.
Step 6
Heat a drizzle of oil in a large pot or dutch oven over medium-high heat. Add the onion & eggplant. Cook, stirring for 3 min or until the eggplant is softened & the onion is translucent.
Step 7
Add the peppers. Mix & cook for 2 min.
Step 8
Add the zucchini, tomatoes, garlic, bay & thyme. Or use a traditional Bouquet Garni! Season with salt & pepper. Mix it all together.
Step 9
Cover & simmer for 5 min. Uncover & cook over medium heat for another 15-20 min, stirring occasionally.
Step 10
Serve the ratatouille over your favorite meat, fish or grains. It's also delicious on its own! Enjoy!
