Pad Thai lite...This peanut noodle recipe hits the spot in half the time!

Stovetop, Pot (small), Colander, Frying pan
Step 1
In a small bowl, combine the soy sauce, lime & peanut butter.
Step 2
Add the sugar & a drizzle of sesame oil. (Vegetable oil is fine here too!)
Step 3
Whisk the peanut sauce together.
Step 4
Prepare the rice noodles according to the package instructions.
Step 5
Heat a drizzle of vegetable oil in a pan over medium-high heat. Add the minced or crushed garlic.
Step 6
Add the cooked shrimp. Stir fry for 2-3 min.
Step 7
Drain the rice noodles. Add the noodles & peanut sauce to the pan.
Step 8
Stir it all together. Turn off the heat.
Step 9
Add the bean sprouts & stir.
Step 10
Serve in bowls garnished with extra soy sauce & fresh cilantro (optional).
