White rice (long grain)

Step 1

If necessary, defrost the shrimp. In a saucepan of boiling salted water, cook the rice according to package instructions. Drain when cooked.

Olive oil
Cooked shrimp
Soy sauce
Pineapple (canned)

Step 2

Drain the pineapple & cut into chunks, if necessary. Heat a drizzle of olive oil in a frying pan over medium heat. Add the shrimp, pineapple & soy sauce. Stir & cook for 3-4 mins, until the shrimp are caramelized.

Tomato

Step 3

Wash & small dice the tomatoes.

Red onion

Step 4

Peel & small dice the red onions.

Cilantro (fresh)

Step 5

Wash & roughly chop the cilantro (optional).

Step 6

Prepare the tomato salsa. In a bowl, add the tomatoes, onions & a drizzle of olive oil. Season with salt & pepper. Add the cilantro (optional) & mix.

Step 7

Serve the rice in a shallow dish with the pineapple shrimp & tomato salsa. Season to taste & garnish with cilantro (optional). Enjoy!
