Mexican-Style Grilled Chicken Sandwich

Step 1
Season the chicken with half of the taco seasoning, salt, pepper & a drizzle of olive oil.

Step 2
Melt a dab of butter in a frying pan over medium heat. Add the burger buns, cut-side down. Toast 1-2 mins, until golden brown. Remove the buns & set aside.
Step 3
In the same skillet, heat a drizzle of olive oil over medium heat. Add the chicken & brown for 3-4 mins on each side. Cover & continue cooking for 6-8 mins or until the chicken is fully cooked (165ºF internal temp).

Step 4
Meanwhile, wash & small dice the tomato.

Step 5
Peel & thinly slice the red onion.

Step 6
In a bowl, add the avocado & mash with a fork. Add the red onion & tomato. Season with salt, pepper & the remaining taco seasoning. Add a squeeze of lime if you have any! Stir to combine.

Step 7
Top the toasted bun with the guacamole, lettuce & chicken. Close the sandwich & enjoy!
