Sweet pineapple meets savory chicken in this fast, flavorful stir fry!

Step 1
In a saucepan of boiling salted water, cook the rice according to package instructions. Once cooked, drain & keep warm.
Step 2
Meanwhile, cut the chicken into 1-inch cubes.
Step 3
Wash & cut the peppers, removing the core & seeds. Cut into thin strips.
Step 4
Heat a drizzle of olive oil in a frying pan over medium heat. Add the chicken, then season with salt & pepper. Cook for 3-4 mins, stirring occasionally. Remove from the frying pan & set aside.
Step 5
Add the peppers to the same pan. Season with salt & pepper. Cook for 2-3 mins, stirring occasionally. Add a splash of water (about 1 tbsp per serving), cover & continue cooking for 5-6 mins.
Step 6
Check that the peppers are tender, then add the ginger & garlic (grated or minced), curry powder & cooked chicken. Mix well.
Step 7
Drain the pineapple (reserving the syrup if applicable) & cut into chunks, if necessary. Add it to the pan. If you have reserved syrup, add about 1 tbsp per serving. Stir & continue cooking for 1-2 mins.
Step 8
Serve the rice in a shallow dish or bowl with the chicken & pineapple stir fry on top. Season to taste & enjoy!
