Potato

Step 1

Preheat the oven to 375°F. Wash & slice the potatoes into thin rounds.

Olive oil

Step 2

Line a sheet tray with parchment paper. Add the potato rounds in an even layer. Drizzle with olive oil & season with salt, pepper & dried thyme, if you have. Roast in the oven for 20-25 min.

Green beans (frozen)

Step 3

Meanwhile, thaw the green beans according to the package directions. Season with salt & pepper.

Salmon (fresh)
Olive oil

Step 4

Remove the sheet tray from the oven & add the salmon. Season with salt, pepper & a drizzle of olive oil. Return to the oven for another 8-10 min.

Sour cream
Chives (fresh)
Lemon

Step 5

Meanwhile, in a bowl, mix sour cream, lemon zest & juice, chopped chives (optional), salt & pepper. Set aside.

Step 6

Serve the salmon with the crispy potatoes, green beans & the sauce. Garnish the salmon with chopped chives & season to taste. Enjoy!
