Stovetop, Oven, Pot (small), Baking dish, Knife
Step 1
Preheat the oven to 400°F. Peel the squash & scoop out the seeds. Cut the squash into large chunks.
Step 2
Bring a pot of salted water to a boil. Add the barley (optional) & squash. Reduce the heat to low, cover & cook for 15 min.
Step 3
Slice the sausage into rounds.
Step 4
Peel & cut the onion into wedges.
Step 5
Drain the grains & squash. Stir in the spinach.
Step 6
Transfer the squash, grains & spinach to a baking dish. Add the onions & sausage.
Step 7
Top with salt, pepper & a drizzle of olive oil. Mix it all together.
Step 8
Roast for 20 min.
Step 9
Serve & enjoy!
