Step 1

Peel & cube the potatoes.

Add the potatoes to a pot of salted boiling water. Cook for 7-10 min, or until fork-tender.

Andouille sausage (smoked)

Cook the sausages to your liking (pan-fried, grilled or boiled!).

Yellow onion

Peel & finely slice the onion. Melt a dab of butter in a pan over medium heat. Add the onion.

Season with salt & pepper. Cook, stirring for 3-5 min. Add a splash of water halfway through cooking.

Step 6

Reduce the heat to medium-low. Let cook for 1-2 min.

Whole grain mustard

Step 7

Add the mustard to the pan. Mix to combine.

Step 8

Add the sausages to the pan. Stir into the onion-mustard mixture.

Step 9

Drain the potatoes.

Add the milk, salt, pepper & a dab of butter to the potatoes. Mash with a fork or potato masher until smooth & creamy.
