Step 1

Rinse & dice the peppers.

Eggplant

Step 2

Rinse & dice the eggplant.

Zucchini

Step 3

Rinse & dice the zucchini.

Tomato

Step 4

Rinse & dice the tomato.

Yellow onion
Garlic

Step 5

Peel & small dice the onion. Peel & mince the garlic.

Step 6

Heat a drizzle of oil in a large pot or dutch oven over medium-high heat. Add the onion & eggplant. Cook, stirring for 3 min or until the eggplant is softened & the onion is translucent.

Tomato paste

Step 7

Stir in tomato paste for 1 min, then add the peppers. Mix & cook for 2 min.

Tomato
Garlic
Bay leaf
Thyme (fresh)

Step 8

Add the zucchini, tomatoes, garlic, bay & thyme. Or use a traditional Bouquet Garni! Season generously with salt & pepper. Mix it all together.

Step 9

Cover & simmer for 5 min. Uncover & cook over medium heat for another 15-20 min, stirring often.

Step 10

Serve the ratatouille over your favorite meat, fish or grains. It's also delicious on its own! Enjoy!
