Stovetop, Frying pan
Spread pesto onto each slice of bread.
Thinly slice the mozzarella. Top one slice of bread with the cheese.
Top with the prosciutto & arugula. Season with salt & pepper to taste. Close the sandwiches.
Heat a drizzle of olive oil in a frying pan over medium heat. Cook the each sandwich for 2 minutes on each side, or until the cheese is melted & the bread is golden brown. As it cooks, press down with a spatula.
Cut each sandwich in half or quarters & serve hot!
