Stovetop, Pot (small)
Peel & chop the onion. Heat a small pot or pan over medium-high heat. Add a drizzle of olive oil, then the onion. Cook, stirring, until the onion browns, 2-3 min.
Add canned tomatoes, minced garlic, paprika, salt & pepper to the pot. Stir to combine.
Using the back of a wooden spoon, make little holes in the sauce. Gently break an egg into each hole.
Cover the pot, lower the heat & cook for 3-4 min, or until the eggs are cooked to your liking.
Once the eggs are cooked, remove from the heat. Top with crumbled feta, sliced avocado & cilantro or parsley (optional). Delicious with toasted bread or tortillas!
