Step 1
Finely dice the onion & set aside.
Step 2
Season the shrimp with salt & pepper.
Step 3
Heat a drizzle of olive oil in a frying pan over medium heat. Add the shrimp & cook for about 2-3 min per side, until pink & cooked through. Transfer to a separate dish & set aside.
Step 4
Add another drizzle of olive oil to the same pan, then add the diced onion with a pinch of salt & pepper. Cook the onion for 5-6 min, until translucent & softened.
Step 5
When the onion is soft, grate in the garlic & add any additional seasonings you'd like. We recommend oregano, garlic powder & crushed red pepper flakes. Cook for just a minute, stirring often.
Step 6
Pour in the marinara sauce & cook for 8-10 min, until slightly thickened.
Step 7
Meanwhile, cook the pasta in a pot of boiling salted water until al dente. Reserve a cup of starchy pasta water. Strain the pasta.
Step 8
Add the cooked shrimp & pasta to the pan with the marinara sauce. Toss to coat & cook for 2-3 min over medium heat, adding reserved pasta water as needed. Remove from the heat when the pasta is tender & nicely coated in sauce.
Step 9
Serve the pasta, garnished with fresh parsley, if you have any. Enjoy!
