Step 1

Cook or soak the couscous according to the package instructions.

Pine nuts

Step 2

Toast the pine nuts in a pan over medium heat. Stir frequently to avoid burning!

Green olives

Remove the olive pits (if they aren't pitted) & cut into slices.

Lemon

Step 4

In a small bowl, whisk together the lemon juice, a drizzle of olive oil, salt & pepper.
