Step 1

Prepare the couscous according to the package instructions.

Cucumber
Raisins

Step 2

Wash & cube the cucumber. Roughly chop the raisins.

Almonds (sliced)

Step 3

Toast the sliced almonds in a small pan over medium-low heat for 1-2 min. Shake the pan to keep them from burning! Remove from heat.

Parsley (fresh)

Step 4

Chop the parsley.

Step 5

Fluff the prepared couscous. Add the couscous to a salad bowl. Then add the cucumber, raisins, almonds & parsley.

Lemon

Step 6

Zest the lemon over the salad. Then squeeze in the lemon juice. Season generously with salt & pepper. Top with a final drizzle of olive oil. Toss it all together. Enjoy!
