Mexican Rice Bowl

Well balanced & yummy Tex Mex rice bowl. Flavor-packed lunch or dinner!

Stove top, Pot (small), Frying pan



Step 1

Cook the rice according to package instructions.

Chicken breast

Step 2

Heat frying pan over medium-high heat. Add a drizzle of olive oil & the chicken breast.

Taco seasoning

Step 3

Pour about 1/4 of a spice packet or 2 tsp of taco seasoning over the chicken. Cook the chicken for 4 minutes on each side or until thoroughly cooked through.

Step 4

Add about 2 tablespoons of water to the pan. Season with salt & pepper. Stir, pouring the sauce over the chicken breast until well coated in sauce. Remove from heat.


Step 5

Once the rice is cooked. Spoon into a bowl. Slice the chicken & 1/2 an avocado.

Chicken breast
Sweet corn (canned)
Red bean

Step 6

Top the rice with chicken, frozen or canned sweet corn, drained red beans, sliced avocado, salt, pepper & the pan drippings.

Cilantro (fresh)

Step 7

Add fresh chopped cilantro (optional). Enjoy!
