Make sure you have...
Stovetop, Pot (small), Knife
Step 1
Peel & dice the onion.
Step 2
Wash the kale. Hold the stem in one hand & use your opposite hand to strip the leaves along the stem away from you. Roughly chop the kale.
Step 3
Heat a drizzle of oil in a pot on medium heat. Add the onion, minced or grated garlic & a pinch of salt. Stir & cook for 2-3 min.
Step 4
Add drained beans to the pot & a pinch of red pepper flakes if you have! Stir to combine.
Step 5
Add broth. Bring to a simmer & smash a few beans against the pot as you mix.
Step 6
Add kale & cook another 2-3 min.
Step 7
Reduce the heat & add lemon juice. Stir to combine.
Step 8
Serve in a bowl garnished with a drizzle of oil, extra lemon juice & red pepper flakes if desired. Enjoy!
