Step 1
Preheat the oven to 400°F. Wash & halve the cherry tomatoes.

Step 2
Line a sheet tray with parchment paper. Add the cherry tomatoes & green beans. Season with salt, pepper & a drizzle of olive oil. Toss to evenly coat. Roast in the oven for 10 min.




Step 3
As the veggies roast, melt 1 tbsp of butter per person in the microwave. Grate in the garlic & zest the lemon. Squeeze in the lemon juice & add a few tbsp of chopped parsley. Season with salt, pepper & mix it all together.

Step 4
Remove the veggies from the oven after 10 min. If necessary, thaw the shrimp, then peel & devein it. Add the shrimp on top of the veggies & drizzle with the butter sauce. Give everything a mix. Top with a few lemon slices if you have some leftover. Return everything to the oven & roast for 10 more min.
Step 5
Remove the tray from the oven. Serve & enjoy!
