Step 1

Preheat the oven to 400°F. Remove the salmon's skin (if needed).

Cut the fish into skewer-sized pieces.

Finely slice the lemon.

Thread the salmon & lemon onto skewers. Alternate between salmon & lemon, folding the lemon wheels in half as you go.

Step 5

Place the skewers on a greased or parchment lined baking sheet. Season with salt, pepper & olive oil. Bake for 7-10 min, or until the salmon is cooked through.

Step 6

Heat the veggie stock in the microwave or in a small pot. If using a bouillon cube instead of veggie stock, stir the cube into hot water.

Combine the couscous & the veggie stock. Prepare the couscous according to the package instructions.

Step 8

Serve the salmon skewers over the couscous. Enjoy!
