Step 1

Preheat the oven to 400°F. Wash the sweet potato & cut into large chunks.

Lay the sweet potatoes in a baking dish. Add a drizzle of olive oil. Season with salt & pepper. Stir, coating the sweet potatoes in the seasoned oil. Bake for 25 min.

Step 3

Remove from the oven.

Arugula
Feta cheese

Step 4

Spoon the hummus into a shallow dish or bowl. Arrange the sweet potatoes & arugula alongside it. Top all with crumbled feta, salt, pepper & a drizzle of oil. Enjoy!
