Potatoes (baby)

Step 1

Cook the baby potatoes in a pot of salted boiling water for 15 min, or until fork-tender. Drain & set aside.

Onion (red)
Red wine vinegar
Sugar (granulated)

Step 2

Thinly slice the red onion. Place the onion in a small bowl. Pour the vinegar over top. Add the sugar & a pinch of salt (optional). Stir to combine. Set aside to marinate.

Parsley (fresh)
Cilantro (fresh)
Dill (fresh)
Lemon

Step 3

In a food processor or blender, combine the parsley, cilantro, dill, salt, pepper & a drizzle of oil. Add a squeeze of lemon juice (optional).

Step 4

Blend until it forms an almost smooth texture. Add another drizzle of olive oil if you like.

Step 5

Add the potatoes to a serving bowl. Add the green herb mixture & marinated onions. Stir to combine.
