Preheat the broiler. Cut the goat cheese in half.
Place the bread slices on a baking sheet. Top each slice with a goat cheese round.
Sprinkle with herbes de Provence (optional) & pine nuts. Drizzle with olive oil. Season with salt & pepper. Broil for 5 minutes or until toasted & melty. Then, remove from the oven.
Arrange the salad greens on a plate. Drizzle with olive oil. Season with salt & pepper. Place the toasts on top of the bed of greens. Bon appétit!
