Step 1

Preheat the oven to 400°F. Slice the cod into 1-inch cubes & add to a parchment-lined sheet tray. Season with salt & taco seasoning. Drizzle with oil, then transfer to the oven & cook for 10-15 min, until the cod is fully cooked & flakes easily.

Red cabbage (shredded)
Lime

Step 2

Meanwhile, add the red cabbage to a bowl with a squeeze of lime & drizzle of olive oil. Season with salt & toss well. Set aside.

Avocado

Step 3

Thinly slice the avocado.

White rice (long grain, cooked)

Step 4

Heat the rice according to package instructions.

Cilantro (fresh)

Step 5

Serve the rice with the cod, cabbage & avocado, with spicy mayo on the side or drizzled on top. Garnish with fresh cilantro (optional). Enjoy!
