Emerald Potato Salad

Stovetop, Blender, Pot (small), Colander

Potatoes (baby)

Step 1

Cook the baby potatoes in a pot of salted boiling water for 15 min, or until fork-tender. Drain & set aside.

Red onion
Red wine vinegar

Step 2

Thinly slice the red onion. Place the slices in a small bowl. Pour the vinegar over top. Stir to combine. Set aside to marinate.

Parsley (fresh)
Cilantro (fresh)
Dill (fresh)

Step 3

In a food processor or blender, add the fresh herbs, salt, pepper & 1 tbsp of olive oil (per person).

Step 4

Blend & add a bit of water if it's too thick.

Red onion

Step 5

Scoop the potatoes into a serving bowl. Add the green herb purée & marinated onions. Stir to combine.

Step 6

Season to taste & enjoy!
