Stovetop, Pot (small), Frying pan, Knife
Step 1
In a pot of boiling salted water, cook the pasta according to the package instructions.
Step 2
Meanwhile, peel & small dice the red onion.
Step 3
Heat a drizzle of olive oil in a frying pan over medium heat. Add the red onion & grate in the garlic. Sauté for 3-4 min, stirring occasionally, until softened.
Step 4
Add the tomato purée & basil leaves (optional). Season with salt & pepper. Continue cooking for 4-5 min, stirring occasionally, until slightly thickened.
Step 5
When the pasta is done, set aside a small ladle of cooking water, then drain the pasta.
Step 6
Add the reserved cooking water & the grated parmesan. Mix well. Add the drained pasta & mix again. Keep warm.
Step 7
Meanwhile, in a second frying pan over medium-high heat, add the slices of prosciutto. Cook on both sides until crispy, then remove from the heat & transfer to a paper towel-lined plate.
Step 8
Serve the creamy tomato pasta on a plate & sprinkle with extra parmesan, if you'd like. Add the crispy prosciutto pieces on top, followed by a few basil leaves & pine nuts, if using. Enjoy!
