Stovetop, Pot (small), Colander, Frying pan, Grater
Bring a pot of salted water to a boil.
Cut the broccoli & cauliflower into florets. Add the vegetables to the pot of boiling water. Cook for 5 min. Drain & set aside.
Add a drizzle of oil to a pan over medium-high heat. Pat the cod bone-dry with a paper towel, then add to the pan. Cook for 4 min on each side.
Make the dressing by whisking together the vinegar, lemon juice, chopped shallots, a healthy drizzle of olive oil, salt & pepper.
Serve the cod alongside the vegetables & topped with the shallot-vinegar dressing. Season with salt & pepper. Enjoy!
