Pasta (tagliatelle dry)

Step 1

Cook the pasta according to package instructions. Once cooked, reserve 1/3 cup of pasta cooking liquid (per serving). Drain the pasta.

Garlic

Step 2

Heat a drizzle of olive oil in a pan over medium-high heat. Add the garlic (grated, minced or crushed).

Tomato paste
Cherry tomatoes

Step 3

Add the tomato paste. Cook, stirring for 1 min. Add the cherry tomatoes. Cook, stirring for 2 min.

Black olives (pitted)
Cod (fresh)
Basil (fresh)

Step 4

Add the olives & pasta cooking liquid. Stir. Arrange the cod fillets in the pan. Season with salt & pepper. Add basil leaves (optional). Reduce the heat. Cover & simmer for 5-7 min, or until cod is cooked through.

Step 5

Arrange pasta on a serving plate. Spoon the cod, tomatoes, olives & sauce over top. Ciao down!
