Stovetop, Frying pan, Knife, Pot (small)

White rice (long grain)

Step 1

In a small pot, cook the rice according to the package instructions.

Broccoli (fresh)

Step 2

Meanwhile, wash & cut the broccoli into florets.

Step 3

In a pot of salted, boiling water, add the broccoli for 5-6 min. Drain, then set aside & keep warm.

Yellow onion

Step 4

Peel & cut the onions into thin slices.

Curry powder

Step 5

Heat a drizzle of olive oil in a frying pan over medium heat. Add the onions & curry powder. Add any additional seasonings you'd like, we suggest onion powder & garlic powder. Stir & cook the onions until softened for 4-5 min.

Coconut milk
Cooked shrimp (frozen)

Step 6

Add the coconut milk, then season with salt & pepper. Add the cooked shrimp, stir, then simmer covered for 2-3 min over low heat.

Step 7

Serve the curry shrimp with the rice, broccoli & any extra sauce. Season to taste with salt & pepper. Enjoy!
