Frying pan, Stovetop, Knife
Step 1
Wash & cut the broccoli into bite-sized florets.
Step 2
To a pot with boiling, salted water, add the broccoli & cook for 5-6 min.
Step 3
Meanwhile, peel & thinly slice the onion. Drain the broccoli & set aside.
Step 4
Heat a drizzle of olive oil in a frying pan over medium heat. Add the onions & curry powder. Add any additional seasonings you'd like, we suggest onion powder & garlic powder. Stir & cook the onions until softened for 4-5 min.
Step 5
Add the coconut milk to the pan. Add the cod & season everything with salt & pepper. Simmer covered for 4-5 min on low heat.
Step 6
Meanwhile, heat the rice according to package directions.
Step 7
Serve the curry cod with the rice, broccoli & top with sauce. Season to taste with additional salt & pepper. Enjoy!
