Sweet potato (cubed)

Step 1

Preheat the oven to 400°F. On a sheet tray lined with parchment paper, add the cubed potatoes in an even layer. Add a drizzle of olive oil, with a pinch of salt & pepper. Toss to evenly coat. Roast in the oven for 10 min.

Mayonnaise
Chipotle seasoning
Lime

Step 2

Meanwhile, in a small bowl, combine mayo & chipotle seasoning. Squeeze in the lime juice & stir.

Salmon (fresh)

Step 3

Pat the salmon dry & spread 1/2 of the mayo mixture over top.

Broccoli (frozen)

Step 4

Remove the sweet potatoes from the oven & give them a stir. Create space on one side of the sheet tray. Add the salmon & broccoli to the empty half of the tray. Return everything to the oven & roast for 15 min or until the salmon is fully cooked. Remove from the oven.

Cotija cheese

Step 5

Plate the salmon with broccoli & roasted sweet potatoes. Sprinkle crumbled cheese on top. Zest the lime overtop, serve with leftover spicy mayo for dipping & enjoy!
