Step 1
Cut the chicken into thin strips.
Step 2
Add a drizzle of oil to a pan over medium heat. Add the chicken & season with the taco seasoning. Sauté for 5-6 min, until fully cooked.
Step 3
Peel the avocado & remove the pit. Spoon the avocado flesh into a bowl. Add a squeeze of lime & pinch of salt. Mash it all together with a fork.
Step 4
Add the corn & beans (drained & rinsed) to the pan of seasoned chicken. Cook for 2-3 min, stirring often. Season with salt.
Step 5
On warm tortillas, assemble the tacos with the mashed avocado, the chicken-bean mixture, cilantro & hot sauce (optional). Serve & enjoy!
