Stovetop, Frying pan
Rinse & drain the corn & beans.
Open the soft taco kit.
Cut the chicken into thin strips.
Add a drizzle of oil to a pan over medium heat. Add the chicken & season with the taco spice packet. Sauté over medium heat for 3-5 min.
Peel the avocado & remove the pit. Spoon the avocado flesh into a bowl. Add a squeeze of lime & pinch of salt. Mash it all together with a fork.
Add the corn & beans to the pan of seasoned chicken.
Cook, stirring for 2 min.
Heat the tortillas according to the kit instructions.
Let everyone make their own soft tacos with the guacamole, the chicken-bean mixture, cilantro & taco sauce in the kit. Enjoy!
