Make sure you have...
Stovetop, Frying pan, Knife
Step 1
Pat the chicken dry with a paper towel. Cut the chicken into thin strips.
Step 2
Heat a drizzle of oil in a pan over medium-high heat. Add the chicken & the taco seasoning. Sauté over medium heat for 5-7 min, until fully cooked.
Step 3
When the chicken is browned, add corn & beans. Season with salt & pepper to taste. Stir, cover & cook for 2-3 min.
Step 4
In a small bowl, add avocado & mash with a fork. Season with salt & pepper. (optional: add a squeeze of lemon or lime juice) & mix.
Step 5
Spread mashed avocado on the tortillas (2 per person). Top with the chicken mixture & a few spoonfuls of salsa. Garnish with fresh cilantro. Serve & enjoy!
