Yellow onion

Step 1

Thinly slice the onion.

Carrots (fresh)

Step 2

Wash & peel the carrot. Cut into 1-inch pieces.

Add a drizzle of olive oil to a large pot over medium heat. Add the onions & carrots. Cook for 5 min, stirring frequently.

Milk
Vegetable bouillon (cube)

Step 4

Add the crumbled bouillon cube & 1 cup of water (per person). Add the milk. Season with salt & pepper. Cover & cook for 5 min.

Broccoli (fresh)

Step 5

While the soup is cooking, cut the broccoli into small florets.

Step 6

Add the broccoli to the pot. Reduce the heat to low & cook for 10 min.

Cheddar (shredded)

Step 7

Add most of the cheddar cheese to the pot, reserving the rest for garnish. Turn off the heat & stir until the cheese has melted.

Step 8

Serve in soup bowls, topped with the remaining cheese. Enjoy!
