Make sure you have...
Frying pan, Stovetop, Knife
Step 1
Heat a drizzle of olive oil in a frying pan on medium heat. Add the chicken breast & season with salt & pepper. Cook undisturbed for 5-7 min. Flip & season the second side with salt & pepper. Cook for an additional 5-7 min or until the chicken breast is fully cooked. Place the chicken on a plate & set aside.
Step 2
Peel & thinly slice the red onion.
Step 3
Slice the chicken into bite sized pieces.
Step 4
In a non-stick pan over medium heat, add one tortilla. Layer on half of the cheese, half of the onion slices & the chicken. Spread the BBQ sauce on top. Add the remaining onion slices & pickled jalapeños (optional). Top with the remaining cheese & second tortilla. Cook for 3-5 min then flip & cook for another 3-5 min.
Step 5
Cut the quesadilla into 4 pieces. Serve with additional BBQ sauce & enjoy!
