Stovetop, Pot (small), Frying pan, Colander
Wash & peel the butternut squash. Cut it in half lengthwise, then scoop out the seeds. Then cut it into cubes.
Add the cubed squash to a pot of salted boiling water. Cook over medium heat for 20 min.
Meanwhile, season the cod with salt & pepper. Wrap each fillet with 2 slices of bacon.
Melt a dab of butter in a pan over medium-high heat. Add the bacon-wrapped cod & brown the fillets on both sides. Cover the pan, reduce the heat to medium-low & cook 6-8 min.
Drain the squash & add it to a bowl. Add a dab of butter, salt & pepper. Mix to combine until smooth & creamy.
Serve the bacon-wrapped cod over the mashed squash. Season with salt & pepper. Garnish with arugula leaves (optional). Enjoy!
