Step 1
Bring a pot of salted water to a boil. Drop in the eggs. Cook for 6 min. Then plunge the eggs into a bowl of icy water to stop the cooking.

Peel the avocado & remove the pit. Thinly slice the avocado.

Step 5
Gently peel the eggs. Slice them in half. Lay each half over a piece of toast.
Step 6
Top with the lemon zest & a squeeze of lemon juice. Add a drizzle of olive oil & cracked black pepper. Enjoy!
