Step 1

Crack the eggs into a bowl. Season with salt & pepper. Whisk to combine.

Heat a drizzle of olive oil in a pan over medium heat. Pour in the beaten eggs.

Cook for 2 minutes, or until the eggs start to solidify around the edges.

Step 4

Arrange dabs of cream cheese & torn pieces of smoked salmon over top. Carefully fold one half of the omelette over the other. Cook until the eggs are done to your liking.

Spring mix lettuce

Step 5

Serve the omelette alongside a bed of salad greens seasoned with olive oil, salt & pepper. Brunch time!
