Step 1

Cut the artichoke hearts in half. Grate the parmesan, if necessary. Coarsely chop the hazelnuts (or you could use sliced almonds!).

Add the arugula to a salad bowl. Top with the artichokes, parmesan, hazelnuts, a drizzle of olive oil, salt & pepper. Spring has sprung!
