Step 1
In a pot of salted, boiling water, prepare the mac & cheese according the package instructions.
Step 2
Meanwhile, add the frozen veggies to a pan over medium heat. Add a splash of water (1 tbsp per serving) & stir. Cover the pan & steam the veggies for 2-3 min until thawed.
Step 3
As the veggies steam, roughly chop sun-dried tomatoes (optional).
Step 4
Uncover the veggies & add the sun-dried tomatoes with a drizzle of oil. Season with paprika, salt & pepper. Stir & cook 1-2 more min then remove from the heat.
Step 5
Add the veggies to the mac & cheese. Stir it all together. Serve & enjoy!
Try adding the cooked mac with veggies to a greased baking dish & top with extra cheddar cheese. Broil the top for a bubbly, crispy finish!
