Preheat the oven to 350°F. On a sheet tray lined with parchment paper, add the tortilla bowls. Spritz with baking spray & toast in the oven for 10 min, until golden brown.

Olive oil
Taco seasoning
Ground beef

Step 2

Heat a drizzle of oil in a pan over medium-high heat. Add the ground beef. Stir & cook, breaking up the meat with the spatula, for about 2-3 min. Once the meat is no longer pink, lower the heat & stir in the taco seasoning. Mix until evenly coated, then remove from the heat.

Step 4

Wash & dice the tomatoes.

Step 5

In a mixing bowl, combine the lettuce, tomatoes & fire roasted corn. Toss in the avocado lime dressing.

Mexican cheese blend

Step 6

Remove the golden tortilla bowls from the oven. Distribute the salad mix into each bowl. Top with spoonfuls of ground beef & shredded cheese. A more dressing if you wish! Serve & enjoy!
