Stovetop, Cast Iron Skillet, Frying pan, Knife
Step 1
Slice the steak into serving portions if needed then transfer to a zip lock bag or Tupperware. Add the marinade & coat the steak evenly. Marinate in the refrigerator for a minimum of 30 min, or up to 24 hrs before cooking.
Step 2
Remove the steak from the fridge about 10 min before cooking. Meanwhile, peel & small dice the tomato. Peel & small dice the avocado. Rinse & roughly chop the cilantro (optional). In a small bowl, combine the tomatoes, avocado & cilantro. Season with salt, pepper & a drizzle of olive oil. Mix it all together & set aside until serving.
Step 3
Heat a grill, grill pan or skillet over medium-high heat. Remove the steak from the marinade, allowing the excess liquid to drip off. Grill the steak for 5-6 min per side, or until cooked to your liking. Transfer to a cutting board to rest.
Step 4
Heat the rice according to package instructions. Fluff & stir in the remaining cilantro with a squeeze of lime if you have any.
Step 5
Thinly slice the steak against the grain.
Step 6
Warm the tortilla on a pan over low heat or in the microwave for about 30 sec. Spread the refried black beans in the center of the tortilla. Keeping the ingredients in a narrow line, layer on the rice, steak & tomato mix. Fold 2 sides of the tortilla inwards, over the filling. Roll up the burrito over the fillings. Serve & enjoy!
