Oven, Parchment paper, Sheet Tray, Knife
Step 1
Preheat the oven to 400°F. Wash & cut the potatoes into 2-inch pieces.
Step 2
On a sheet tray lined with parchment paper, add potatoes, a generous drizzle of olive oil, salt & pepper. Toss it all together. Roast at 400°F for 20 min.
Step 3
Wash & finely chop parsley.
Step 4
Drain & rinse capers if needed. Finely chop.
Step 5
In a bowl, add capers, parsley, lemon zest, lemon juice & crumbled feta. Season with salt & pepper. Add a drizzle of olive oil & mix well to combine. Consistency will be chunky & creamy.
Step 6
Remove the potatoes from the oven. Create space an empty space in the center of the tray. Add the salmon. Season all over with salt & pepper. Add a drizzle of olive oil. Return everything to the oven & bake for 12-15 min or until the salmon is fully cooked.
Step 7
Once cooked, spread the caper sauce over the salmon & serve immediately! Enjoy!
