Utensils

Stovetop, Frying pan

Cucumber

Step 1

Wash & cut the cucumber into 1/2-inch cubes.

Cherry tomatoes

Step 2

Wash & cut the cherry tomatoes in half.

Feta cheese (block)

Step 3

Drain & dry the feta with a paper towel. Cut it into 1-inch cubes.

Flour (all-purpose)

Step 4

Add the flour to a shallow dish, then add the feta & toss to coat it in the flour.

Neutral oil

Step 5

Add enough neutral oil to a frying pan to cover the surface of the pan. Heat the oil on medium heat. Add the feta & cook for 2-3 min on each side, until lightly golden brown. Remove the feta & place on a paper towel-lined plate.

Lemon

Step 6

Prepare the dressing: In a bowl, mix 1 tsp of olive oil per person with the lemon juice. Season with salt & pepper. Mix to combine.

Quinoa (cooked)

Step 7

Heat the quinoa according to package instructions.

Step 8

Plate the quinoa & arrange with the cucumbers, cherry tomatoes & crispy feta. Dress the bowl & garnish with some fresh herbs if you have any. Enjoy!
