White bread (sliced)

Step 1

Preheat the oven to 250°F. Cut the bread into ½ inch cubes & spread evenly on a sheet tray. Bake in the oven for 30-40 min or until completely dried out. If your bread is already stale, you can bake for a shorter time or skip this step altogether!

Carrots (fresh)
Celery
Yellow onion
Baby bella mushrooms (whole)
Thyme (fresh)

Step 2

Wash & chop carrots, celery, onion and mushrooms all into small pieces. Remove thyme leaves from sprig.

Butter (unsalted)

Step 3

Melt butter in a pan on medium-high heat. Add chopped onion, carrots, celery, mushrooms & thyme. Season generously with salt and pepper. Cook, stirring occasionally until the veggies begin to soften, about 8-10 min.

Veggie broth

Step 4

Add the cooked veggies & dried bread to a large bowl. Pour in veggie broth & mix it all together.

Step 5

Raise the oven temperature to 350°F. Grease a baking dish & add the stuffing mixture in an even layer. Bake for 35-40 min or until the stuffing is golden brown. Serve & enjoy!
