Step 1
Wash & cut the cucumber into half moons.

Step 2
Wash & cut the cherry tomatoes in half.

Step 3
Peel & thinly slice the red onion.

Step 4
Wash & cut the bell pepper into 1-inch cubes.

Step 5
Wash & chop the romaine lettuce.


Step 6
Wash & finely chop the mint & parsley.

Step 7
Cut the pita bread into 1-inch cubes.

Step 8
Heat a generous drizzle of olive oil in a pan on medium heat. Add the pita & stir continuously. Fry the pita for 8-10 min or until the pita is golden brown & crispy.

Step 9
Heat the grilled chicken strips according to the package directions.

Step 10
Arrange the prepared veggies on a bed of the chopped lettuce. Top with the grilled chicken, crispy pita & chopped herbs. Squeeze the lemon on top of the salad & finish with a drizzle of olive oil. Season with salt & pepper. Enjoy!
