Crispy everything-seasoned salmon served with a cool, refreshing cucumber salad!

Step 1
Preheat the oven to 375ºF. Add the everything seasoning & panko bread crumbs to a dish. Mix to combine.
Step 2
Press the salmon, flesh-side down, into the everything seasoning mixture until evenly crusted.
Step 3
Add a drizzle of olive oil to an oven-safe skillet or sheet tray. Add the crusted salmon skin-side down. Sprinkle any additional everything seasoning mixture on top of the salmon. Lightly drizzle the salmon with olive oil. Place the skillet in the oven & bake for 15-18 mins or until the salmon is fully cooked & the crust is light golden brown.
Step 4
Meanwhile, wash & cut the cucumber into half moons.
Step 5
Wash & cut the cherry tomatoes in half.
Step 6
Remove the salmon from the oven. Plate the salmon with the cucumber & tomatoes. Drizzle the cucumber salad with olive oil & season with salt.
Step 7
Top the dish with a dollop of tzatziki sauce. Garnish with additional everything seasoning, if desired. Serve & enjoy!
