Step 1
In the bowl of a blender or food processor, add parsley (leaves & stems), chives, garlic, lemon zest, a squeeze of lemon juice, greek yogurt, salt, pepper & olive oil. Blend until smooth & creamy. (For some heat, add 1/2 of a seeded jalapeño!) Taste & adjust the seasoning.
Step 2
Chop the cabbage into small pieces & transfer to a serving bowl.
Step 3
Pour the creamy dressing over the chopped cabbage & mix it all together! Ditch the fork & enjoy this salad with some tortilla chips for some added crunch (optional)! Enjoy!
