Be sure to follow the pizza dough package instructions! Preheat the oven to 450°F. Wash the zucchini. Slice it into long ribbons using a veggie peeler.
Lay the pizza dough onto a parchment-lined baking sheet. Spread the pesto over the dough, leaving a border around the edges.
Arrange the zucchini ribbons over the pesto. Top with torn or shredded mozzarella. Add a drizzle of olive oil, salt & pepper. Bake for 10 min at 450°F, or according to the package instructions.
When the pizza is golden brown & melty, remove it from the oven. Garnish with fresh spinach. Enjoy!
